Recipe: Spicy Salmon and Sweet Potato Fishcakes

Ok so it has been requested I diversify away from using Beef in every dish (hey... I like beef ok?) so here is a very quick, simple and tasty way of using some of that lovely fish they call Salmon... mmmm! Yes, here we have my Spicy Salmon and Sweet Potato Fish Cakes... or Patties... whatever you wanna call them, this recipe hit's the spot!
Ingredients:
200g Smoked Roast Salmon, Flaked (You can use tinned if you're a bit skint) 400g (RAW WEIGHT) Sweet Potato, Cooked, Peeled and Mashed 2 Slices of breads worth of Breadcrumbs (You won't use it all) 1 tsp of Hot Spice Mix 1/2 tsp of Coriander OR handful chopped fresh if you have it Pinch of Salt and Pepper
Method:
1. Combine the sweet potato and salmon into a bowl, mix up and add the spices evenly. 2. Form a large ball with the mix. 3. Split the ball into 4 equal balls. 4. Pad the balls down into equal sized 3/4" thick patties. 5. Lightly coat the patties in breadcrumbs. 6. Heat a little oil in a pan and carefully place the patties in. They will take around 5 mins per side on medium heat to golden up... Remember everything is already cooked! 7. Once golden, fry the edges of each pattie gently. 8. Serve up with some sweet chilli sauce, some green beans... or whatever sides you want... experiement!
